Lasagna Recipe


This is my mother's lasagna recipe that she gave me when I wanted to start making my own. I was scared because it seems like a complicated dish but once I put it together and cooked it in less than a hour it quickly became one of my favorites. Here's how the easiest lasagna recipe goes....

  • 1 lb. lasagna noodles
  • 2 lbs. ground meat
  • 1 cup ricotta (Italian cottage cheese)
  • 2 eggs
  • 4 cups tomato sauce - preferably that premade stuff in jars that's made with basil. Classic Italian is the type, doesn't matter the brand but not cheap kind.
  • 1 lb. deli sliced mozzarella cheese
  • Parmesan cheese
  • Salt, pepper, onion powder, garlic powder, whatever else you want.

Lasagna Preparation instructions:
1.) Brown your meat and season it really well with the above. Drain it then add in the tomato sauce. Get it simmering and let it go for about 15-20 minutes. Taste and adjust seasoning.

2.) Boil the lasagna noodles according to package instructions.

3.) Mix ricotta and eggs until well blended together.

4.) Spray no stick cooking spray in a 9x13 baking dish. You'll also have enough ingredients left over to make another pan about half as large.

Making the Lasagna
Put a layer of meat on the bottom first. Then lay noodles to cover it. Put another layer of meat, then ricotta, then mozzarella, then sprinkle generous layer of parmisan. Repeat this process finishing with cheese on top.

Bake your lasagna for 30 minutes at 350 degrees. If you want a moist top instead of a crispy top you should cover it with foil. I always prefer it non crispy.

That's it! Takes me about an hour to do. It might take others an hour and a half since I'm fast.
