Spaghetti Sauce Recipe


Damn good tomato sauce recipe here

Making tomato sauce from scratch is a fairly easy and people love it. Most people I've come across have never had tomato sauce from scratch so its an easy way to impress. So here is what you need:

  • A dozen medium tomatoes
  • A meduim yellow onion chopped fine
  • a few cloves of garlic chopped fine
  • olive oil
  • basil
  • Cast Iron Pot
  • Salt, pepper, spices of choice
  • Chicken, Sausage or whatever meat optional
First you want to take the cores(top and bottom buttons) out of each end of all your tomatoes and then boil them in water until the skin starts to come off from the edges of the cuts. Take the tomatoes out, remove the skin and cut them up in 4 pieces each. Put that on the side.

Next you saute down your onions & garlic in the cast iron pot with the olive oil. Then add in your tomatoes and spices. Crush down the tomatoes into bits or as fine as you want it. You can get it down smooth or leave chunks. Cook it down until it thickens to desired consistency.(an hour or so)

If you're using meat such as chicken you want to initially brown the chicken before you start with your onions and take it out on the side. Add it back in when you have crushed up your tomatoes and cook with lid on until the meat has reached desired tenderness. Add the basil at the end about 20 minutes before serving and while on low heat.
